I can’t find a way of customising the popup menu that appears when right-clicking on an open document name in the open documents listing.

I want to add “Save As…”

AFAIK there is no such customizing possible.

But you can add “Save as…” to the context menu of the document window:

Tools > Customize Menus… > Context Menu >> Insert Below >> File || Save As
